Traditional Slovenian Sunday - Branzino (Sea Bass) Roasted in Salt

Branzino (Sea Bass) Roasted in Salt celebrates the best from the Slovenian sea—our delicious sea salt and Branzino.



Ingredients:

  • 3 egg. whites
  • 600g (1 1/2 pound coarse sea salt)
  • 400g (1 pound) fine sea salt 
  • 1 whole branzino (600g / 1 1/2 pound)
  • 2 sprigs rosemary
  • 1 sprig dill

Method:

 Combine egg whites with both salts in a bowl.

  1. Make a sea bed on the baking sheet.
  2. Place the herbs into the cavity of the fish.
  3. Place the fish on top of the sea bed and cover it with salt.
  4. Bake for 18 - 20 minutes at 200 C / 390 F.
  5. Serve with Gremolata sauce.
