Branzino (Sea Bass) Roasted in Salt celebrates the best from the Slovenian sea—our delicious sea salt and Branzino.
Ingredients:
- 3 egg. whites
- 600g (1 1/2 pound coarse sea salt)
- 400g (1 pound) fine sea salt
- 1 whole branzino (600g / 1 1/2 pound)
- 2 sprigs rosemary
- 1 sprig dill
Method:
Combine egg whites with both salts in a bowl.
- Make a sea bed on the baking sheet.
- Place the herbs into the cavity of the fish.
- Place the fish on top of the sea bed and cover it with salt.
- Bake for 18 - 20 minutes at 200 C / 390 F.
- Serve with Gremolata sauce.
