Sundays with traditional Slovenian recipes – Pohorski lonec

Pohorski lonec is a meat stew from the Pohorje region. Like Bograč, this recipe calls for three types of meat: veal, pork, and turkey. It’s a rich meat stew, great for any day of the year.

Ingredients:

  • 2 tbsp oil
  • 2 onions
  • 50g bacon
  • 2 garlic cloves
  • 250g veal
  • 250g pork
  • 250g turkey
  • 1 tbsp mushroom powder
  • ½ tsp thyme
  • ½ tsp marjoram
  • ½ tsp oregano
  • 1 bay leaf
  • 1 sprig parsley
  • 300g mixed mushrooms
  • 400g cooked barley
  • 400g potatoes
  • 1 tbsp apple cider vinegar

Method:

  1. Dice the onion and saute for a few minutes. Add the bacon and garlic and cook.
  2. Add all three types of meat and cook for 10 minutes.
  3. Season with mushroom powder and spices.
  4. Add the cooked barley and 1.5 liters of water. Simmer for 1 hour.
  5. Add the potatoes and cook for 30 minutes. 
  6. Season with vinegar and sprinkle with chopped parsley.
  7. Divide between plates and serve.
