Sundays with traditional Slovenian recipes – Onion Marinated Sardines

This is our 10th Traditional Slovenian recipe, and we’re excited to finish this series with a light and delicious dish from our coast: Onion Marinated Sardines.

This gorgeous dish is perfect as an appetizer or main dish and can be easily made ahead (and stored in the fridge). 

Ingredients:

  • 600g sardines
  • 100g flour
  • 150ml olive oil for frying
  • 100ml canola oil for frying
  • 3 tbsp olive oil for marinade
  • 1 large onion
  • 3 cloves of garlic
  • 5 – 6 cherry tomatoes (optional)
  • 250ml white wine
  • 50ml wine vinegar
  • 100ml water
  • 3 bay leaves
  • ½ tsp peppercorn
  • 1 tbsp chopped rosemary
  • 1 tsp breadcrumbs
  • 2 tbsp chopped parsley
  • 1 lemon

Method:

  1. Clean the sardines, coat them in flour, and deep fry them until golden.
  2. For the marinade, sauté the onion and garlic. Optionally add the tomatoes.
  3. Pour in the wine, vinegar, and water. Cook until the alcohol evaporates, for approximately 6 minutes.
  4. Season with herbs and spices, and add the breadcrumbs.
  5. Time to layer. Add half of the sardines to a small baking dish. Cover with half of the marinade. Add the rest of the sardines and marinade.
  6. Arrange lemon slices on top and sprinkle with fresh parsley.
  7. Place in the fridge for at least 3 hours or overnight, then serve.
