Sundays with traditional Slovenian recipes – Let's make »Frika«

For the second recipe in the series we are sharing a delicious recipe called Frika. A beautiful dish made with grated potatoes and cheese.


  • 400g (1 pound) potatoes
  • 50g pancetta or olive oil
  • 160g semi-hard cheese (Tolmin)
  • 50g hard cheese (Tolmin)
  • 2 tbsp chopped herbs (parsley, oregano, lovage)


  • Peel the potatoes and wash and strain until the water is clean. Drain well. 
  • Pan-fry the pancetta in a pan for about 3 - 4 minutes. 
  • Add the grated potatoes and cook for 15 - 18 minutes. 
  • Add half of the cheese, stir, then add the rest of the cheese and herbs. 
  • Cook for 5 minutes, turn the Frika around and cook for another 5 minutes. 
  • Serve
