For the first recipe, we’re making Idrijski žlikrofi.

Idrijski žlikrofi is pasta stuffed with potatoes, herbs, onion, and lard. A gorgeous dish served as a side or main dish.

Ingredients:

  • dough 300 g (2 1/2 cups) all-purpose flour
  • 2 eggs
  • 1 tbsp canola oil
  • 2 - 3 tbsp milk

Filling:

  • 500 g (17.5 oz) potatoes
  • 50 g (1.7 oz) pork cracklings in lard or chicharon or pancetta
  • 1 large onion
  • 1 tbsp chopped chives
  • 1/2 tsp chopped marjoram

Method:

  1. For the dough, knead all the ingredients together and set aside for 1 hour.
  2. Saute diced onion with lard.
  3. Mash warm cooked potatoes with onion, lard, herbs, salt, and pepper. Shape into hazelnut-sized balls.
  4. Roll the pasta into a 1-2 mm thick sheet. Place the potato balls on the dough spaced one finger width apart. Fold the dough over the filling and seal the balls. Trim the dough around the filling, seal again, and press on top of the dough to get a hat-shaped žlikrof.
  5. Cook the žlikrofi in boiling salted water for 2-4 minutes.
  6. Make a simple sauce with melted butter, sage, water, and chives to serve. Toss with žlikrofi and enjoy.
