Ana Roš with House Franko 3 Michelin stars

Ana Roš and Hiša Franko have a new star in the Michelin Guide for 2023 and are the only Slovenian restaurant with three stars. Ljubljana today celebrated the fourth edition of the selection of restaurants that have made it into the famous Michelin Guide for Slovenia. This year, nine Slovenian restaurants have been awarded Michelin stars, one less than last year. Milka with chef David Žefran has two, and seven more restaurants have one star.

Impressive gastronomic growth

"Since we arrived in the country, our team of inspectors has been continuously impressed by Slovenia's gastronomic growth. In a small but exciting country, chefs and their teams show a strong commitment to continuously push culinary boundaries. They boldly imagine innovative and sustainable concepts, proudly showcase local ingredients and ingeniously combine their food heritage with ideas from abroad," said Gwendal Poullennec, International Director of Michelin Guides, in a Michelin press release.

In last year's evaluation, Gostilna pri Lojzetu with Tomaž Kavčič (Vipava), Dam with Uroš Fakuč (Nova Gorica), Hiša Denk with Gregor Vračko (Zgornja Kungota) and Grič with Luka Košir (Šentjošt nad Horjulom) each retained one star. Atelje with Jorg Zupan (Ljubljana) also retained one star last year, but the restaurant closed its doors at the beginning of this year.

Last year, it was reissued to the restaurants Cob in Portorož, where Filip Matjaž works, Milka in Kranjska Gora, where the cuisine is led by David Žefran, and Strelec in Ljubljana, with Igor Jagodic. Uroš Štefelin won it with his new restaurant Hiša Linhart in Radovljica.

Unique and extraordinary cuisine

"Ana Roš's talent and culinary personality are known worldwide, and Hiša Franko has impressed Michelin inspectors since the first edition of the Michelin Guide Slovenia by continuously raising the level of quality. In this restaurant, located in the small village of Kobarid in north-western Slovenia, the self-taught chef Ana Roš creates unique and extraordinary cuisine that pays tribute to the neighbouring Soča Valley and its natural and culinary heritage," said the French culinary guide.

As the only Slovenian three-star restaurant continues to tell us, they will continue to surprise, but at the same time remain true to our philosophy and love for the Soča Valley.

As of today, Hiša Franko has become the 140th restaurant in the world to be awarded this highest distinction in the Michelin Guide.
