Sundays with traditional Slovenian recipes - Bograč

Bograč is a fantastic one-pot dish from Prekmurje. This phenomenal one-pot wonder is made with three types of meat, potatoes, herbs, and spices. It’s one of the most hearty and delicious dishes in Slovenian cuisine.

Ingredients:
3 tbsp lard or oil
3 large onions
½ red pepper
3 garlic cloves
2 bay leaves
2 tbsp paprika powder
1 tsp marjoram
½ tsp caraway powder
½ tsp thyme
300g beef
300g game 
300g pork
600g potatoes
160ml red wine

Method:
1. Saute the onion in lard or oil. Add diced pepper, garlic, and herbs. Cook for 5 minutes.
2. Add beef and 250ml (1 cup) water. Cook for 45 - 60 minutes.
3. Add game. Cook for 45 - 60 minutes.
4. Add pork. Cook for 30 - 40 minutes.
5. Add potatoes. Cook for 30 - 40 minutes.
6. Season with salt and pepper to taste. Add red wine and cook for 10 - 15 minutes, then serve.
