Istrian Fuži is traditional pasta, made with two ingredients: flour and eggs, and it’s known for its beautiful shape. To serve, we recommend making a simple black truffle sauce. Perfect for during the week or on weekends.
Ingredients:
pasta
200g all-purpose flour
2 eggs
sauce
1 tbsp olive oil
1 tbsp butter
1 garlic clove
black pepper, to taste
80g (1/4 cup) hard cheese, like Parmesan
300ml preserved pasta water
3 tbsp grated black truffle (tartufata)
Method:
1. Add flour and eggs to a bowl. Knead into a smooth dough, then set aside for 30 minutes.
2. Roll the dough to the thinnest thickness using a pasta machine. Then, cut into 4cm (1½ inch) rectangles.
3. Take a pencil, and place its handle on one square of the dough. Fold its opposite ends over each other to get fuži.
4. Cook in salted boiling water for 3 - 4 minutes.
5. Add oil and butter to a pan. Add the garlic and season with pepper. Cook for a few seconds, then add the pasta cooking water.
6. Add the pasta, toss, and stir in the cheese and truffles (or tartufata).
7. Serve immediately.
